Château Caillou.

Château Caillou is located in Barsac, one of the five municipalities included in Sauternes AOC, in the vicinity of both the Château Climens and Château Coutet.

The property was purchased by Joseph Ballan in 1909; today it is his granddaughter Marie-Josée Brousse and her husband Michel Pierre who manage the property.
Château Caillou classified as Les seconds Crus years 1855, with its vineyard of 13 hectares, which has the same design today.

The plants have an allocation of 90% Sémillon and 10% Sauvignon, which is planted in the limestone rich soil, which is typical for Barsac. The vineyard has 6600 vines / ha.

The berries are harvested by hand in batches, through selective picking, and each batch is fermented and aged separately.

When ageing is complete, is expected to each batch, and how these would be mixed to achieve as good quality as possible.
60% of the wine fermented in stainless steel tanks and 40% in the barrel. The ageing is done in oak barrel of which 60% is renewed each year.
Château Caillou produces 22 000 to 26 000 bottles a year
